INGREDIENTS:
1 tablespoon olive oil
Juice of 2 oranges
Juice of 3 lemons
5 garlic cloves, minced or pressed
1 tablespoon chopped fresh parsley
1 tablespoon finely sliced red onion or shallot
Pinch red pepper flakes
Salt and pepper, to taste
3 lb. medium shrimp peeled and deveined
1 medium lemon, cut into wedges
1 medium orange, sliced into wedges or slices
DIRECTIONS:
1. Find a medium bowl and add the olive oil, orange juice, lemon juice,
garlic, onion, 2 teaspoons of the
2. parsley and a pinch of red pepper flakes. Stir well to combine.
3. Pour the mixture into a large skillet and place over a medium heat.
4. Bring to a simmer and cook for atleast 5-8 minutes until reduced to
half.
5. Add the shrimp, season well then cover and cook for about 5 minutes
until no longer pink.
6. Top with the remaining parsley and with the lemon and orange slices,
then serve and enjoy.
