1 onion, peeled and sliced
1 cucumber, sliced
2 avocados, pitted, peeled, and chopped
1-pound cherry tomatoes, halved
2 tbsp. olive oil
ΒΌ cup fresh cilantro, chopped
2 tbsp. lemon juice
Salt and ground black pepper to taste
1. Using a large salad bowl, mix the tomatoes with the cucumber, onion,
and avocado and stir. Add the oil, salt, pepper, and lemon juice and toss
to coat well.
2. Serve cold with cilantro on top.
